JHM Hotels wanted to bring the farm-to-table restaurant movement deeper into Greenville, SC at the newly renovated Hyatt Hotel on NOMA Square. This stand alone sleek and warm, sophisticated and family friendly restaurant creates a cozy nest with natural stone, wood accents and a counter overlooking the exhibition kitchen—aka the foodies front-row.
Everything is made from scratch, à la minute. “Our concept is to offer food that is as fresh as possible,” crows Executive Chef Trevor Higgins. He explains, “It’s taking your classic southern comfort foods and twisting it with international ingredients and different spices, different techniques… not just your standard grandma’s recipe.” In keeping with Roost’s concept, the bar will use no sodas or juices containing high-fructose corn syrup. And the wine list embraces domestic selections that all come from organic, biodynamic, or sustainable vineyards. Feast your eyes on the glass-walled, walk-in pantry, where an eye-catching display of food items gleams with charcuterie, cheeses, and jars of house-made pickles.
